Nut MeatLoaf

I posted a mashed potato recipe from Main Street Vegan by Victoria Morgan. I recently tried this nut meatloaf (named Neat Loaf) from her book. I had trouble getting it to stick together though- maybe next time I will add a some ground flaxseed. This recipe was in the book Main Street Vegan and it comes from The Peaceful Palate by Jennifer Raymond.

Ingredients:
2 cups  o. cooked brown rice
1 cup finely chopped walnuts
1 onion, finely chopped
1/2 medium o. bell pepper, finely chopped
2 medium o. carrots, shredded or finely chopped
1 cup wheat germ
1 cup quick-cooking rolled oats
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon dried sage
2 TBSP o. soy sauce  (I only used 1 1/2 TBSP o soy sauce and added 1/2 TBSP water)
2 TBSP o. stone ground mustard

BBQ sauce or ketchup

Preheat oven to 350 degrees.
Combine all ingredients except BBQ sauce or ketchup. Mix ingredients with large spoon for 2 minutes. This will help it bind together (next time I am going to whisk 3 TBSP water with 1 TBSP ground flaxseed- let sit for 2 minutes- and add that to the mixture to help bind as well).
Pat into oiled 5 X9 inch loaf pan and top with either BBQ sauce or ketchup. Bake for 60 minutes. Let stand for 10 minutes before serving. Serves about 8 people, or 4 hungry people.

Topped the Neat Loaf with 1/2 homemade jerk BBQ sauce and 1/2 o. ketchup.






Jerk BBQ Sauce:

Ingredients:
1/3 cup o. ketchup
1 teaspoon molasses
2 TBSP maple syrup or brown rice syrup
4 teaspoons lime or lemon juice
1 teaspoon of ginger juice (I get the juice out by pressing in a garlic press)
1/2 TBSP of jerk spice (I use Penzeys Jerk)
pinch of cayenne pepper

Mix well & add to whatever you want to slather in BBQ Sauce (tofu, seitan, tempeh, Neat Loaf)
