Whipped up this simple sandwich for lunch today.
Two pieces of homemade buckwheat/whole wheat bread
o. lettuce
Chipotle Veganaise (This was my first time trying this. It was pretty good. It was a "I'm hungry while grocery shopping" purchase.)
o. grape tomatoes cut in half lengthwise
avocado chunks (i should have done long slices, the chunks kept falling out of my sandwich!)
