Woodstock Salad Dressing

This dressing is awesome! My husband & I love it so much.  We make big salads with quinoa on the bottom about once a week and this dressing is our go-to.

The recipe is found at the link below:
http://recipes.sparkpeople.com/recipe-detail.asp?recipe=698649

Here are the changes I make to the recipe:

  • 4-5 sun-dried tomatoes instead of 3 (I try to find sun-dried tomatoes that do not contain sulfites; some people have an allergy to them. We are pretty sure my husband does because he gets headaches if he consumes alcohol or other food items that contain sulfites).

  • Instead of canola oil, I use o. flaxseed oil  (you can get this for a great price at vitacost.com )

  • I do not use 5 Tablespoons of soy sauce: holy salted-out!  I use 3 T o. soy sauce and 2 T of water.

  • For the garlic, I use Penzeys garlic powder (not salt).  The raw garlic is great for you, but it gives the dressing a spicy flavor vs. a cooked garlic flavor. I have tried this recipe with 3 cloves of garlic cooked and it's about the same results as the garlic powder.

I store my dressing in recycled glass jars.  Sometimes I have to add a few drops of warm water to make the dressing pourable.  It is so tasty though. nom nom nom nom
